In this part of my low fat vegan recipe series I’ll make 2 vegan cheese sauces, an Awesome Vegan Macaroni and Cheese and a portobello cheese steak sandwich. The vegan mac and cheese recipe is a staple side that I eat all of the time. I absolutely love it and I hope you give it a try.

Vegan Macaroni and Cheese

Soak Raw Cashew in Water overnight
Boil Following until Tender
1. 1 Cup Cubed Skinned Potato
2. 1/4 Cup Diced Carrots
3. 1/3 Cup Diced Onion

Blend everything until smooth (About 3 Minutes)
1. Veggies
2. Cashews
3. 2 to 2.5 TBs Nutritional Yeast
4. 1/4 Cup Light Non-Dairy Milk
5. 1 TBs Lemon Juice
6. 1 tsp Salt
7. 1 tsp Garlic Powder
8. 1 TBs White Miso Paste

Basic Vegan Cheese

Add the following and blend until smooth (About 3 Minutes)
1 Cup Veggie Stock
2 TBs Lemon Juice
1/4 Cup Drained Canned Pimentos
2/3 Cup Raw Almonds (Soaked overnight)
1.25 tsp Onion Powder
1/4 Cup Nutritional Yeast to Taste
2 tsp Salt

Portobello Cheese Steak

Cook 4 sliced Portobello mushrooms on high
Add the following and stir for 1 minute
1. 1/2 tsp Liquid Smoke
2. 1 TBs Liquid Aminos or Soy Sauce
… and remove from pan

Add the following and cook til tender
1. 1 Onion cut into strips
2. 1 Green Pepper cut into strips

Add pepper to taste
